100 g butter
1/3 cup sugar
1 egg and 1 egg yolk
1 tsp vanilla essence
1-1½ self raising flour
Apples ( green apples are the best)
More flour and sliced almonds for the topping
Cream butter and sugar, add one egg at a time, add essence, cream until fluffy. Add enough flour with a wooden spoon to produce a soft dough. Press dough into a spring form tin, 1cm thickness and a bit up the sides.
Stew or microwave sliced apples with a little sugar and a cinnamon stick. Cool and add to pastry base.
Add more flour and sliced almonds to remaining pastry, crumble with fork to cover the apple mixture with it.
Bake at 180 celcius for approx half an hour, or until top has turned golden brown.
Seasonal variations can be used eg raspberries, plums, apricots either with the apple mixture or not. Using fresh fruit makes a far superior taste.
