50g butter
¼ cup brown sugar
rind of 1 lemon and 1 orange and the juice of both
½ tsp nutmeg
Melt all of the above in the microwave. Pour over root vegetables (kumera, pumpkin, parsnip)
Cook all of the above in a moderate oven for 20 minutes.
This dish can be served with cooked greens and red peppers.
